Fast and Easy Meal
I made this tonight, and I don't care if you're a Paleo eater or not - this is good. Plus, it took me about 10 minutes to assemble, I put it in a crockpot, and just let it do its thing. I would highly recommend adding some kale (I added 1 bunch), and using either Thai Kitchen or Polar coconut milk (it's better than the Goya brand). You can leave it to cook on low for 9 hours or high for 4 hours. The recipe says that you can pour it over spinach, which sounds great, but we used cauliflower rice. We also frequently pour things like this over frozen veggies (baby normandy mix) when we're looking to make something a little more hearty. So. Delicious.
