TRY THIS: LUNCH AND/OR DINNER

I'm a huge fan of making an extra large/double recipe for dinner and then taking leftovers for lunch. These both reheat really well, and who doesn't want soup on cold, rainy days like this??!

Don't be intimidated by the "spicy" stuffed Mexican peppers: if you're worried about spice level, make sure you deseed the poblanos really well, and leave out the hot sauce. It will still taste delicious. If you want to be even more careful, cut out some of the diced peppers - but don't leave them out all together. They're not really spicy and they add a lot of flavor.

I used to think I didn't like curry because I envisioned thisoverwhelming odor and flavor....but it's really not. The curry in this soup adds flavor but doesn't take things over. In fact, I hadn't made it myself, I probably wouldn't have been able to tell you exactly what spices were in it. Also, just one more delicious way to use the most amazing squash ever: spaghetti squash.
